Tucked into the east end of Boulder’s Pearl Street mall is Trattoria on Pearl. Guests at the Trattoria (which means, “Neighborhood Italian café”) will notice the menu features traditional dishes from Italy.
Trattoria on Pearl’s owner and chef, Guillermo Casarrubias, is on hand to supervise the kitchen on a daily basis. Each plate must pass muster before it leaves the kitchen. His personal flair for culinary artistry and his uncompromising good taste are consistently evident in each succulent creation.
On 2005, Guillermo Casarrubias served his first cuisine as the proud owners of Trattoria on Pearl. Guillermo is delighted to be part of Boulder’s longstanding tradition of independent retailers.
Guillermo commented, I believe customers come in for our delicious food. They will come back because of the entire dining experience – from memorable dishes to the welcoming atmosphere.”
Guillermo, born and raised in Acapulco, left his large and loving family to come to the US in 1990. His love of Italian foods and restaurants was born in Chicago where he worked in a series of kitchens populated by chefs and cooks, direct from Italy. From them, he learned the traditional passion, flavors and methods he continues to cultivate at Trattoria on Pearl today.
In these same restaurants, he developed his knack for creating a warm, inviting dining room where each guest feels like a part of the family, receiving all the love and devotion, delicious food and attention, without having to do the dishes!
Originally inspired by one of Chicago pastry chefs, he continues to create and oversee Trattoria on Pearl’s delicious homemade breads and desserts.

Trattoria on Pearl is open daily from 11:30 a.m. – 10:00 p.m including Sundays.
During Winter, Trattoria On Pearl opens on Sundays from 3:00 pm – 9:00 pm
