Make no mistake, the menu, featuring modern Italian cuisine, is a culinary masterpiece, with each dish meticulously prepared under the watchful eye of Chef Daniel Cofrades. The preparation of food is more than a career to this gifted culinary artisan. It is a calling.
Born in Spain, Daniel grew up hanging around gourmet kitchens as a child. Over time, he was occasionally given the chance to assist in preparation. He eagerly learned each taste and texture at an age when most boys are content to play baseball and ride bikes. Always sure of his life’s direction, he left Spain to train as a pastry chef in France, then soon became a chef at Michel Rostang, a Michelin three-star restaurant in Paris. From there he lived in Venezuela, Brazil and Indonesia where he acquired extensive knowledge and mastery of seafood.
By the time he found his way to the United States, he had become known for his distinctive seafood dishes. Prior to joining Sara and Guillermo in their new Boulder enterprise, Chef Daniel was one of the founding chefs under chef Brian Moscatello at the acclaimed Adega restaurant in Denver, as well as a chef at Kevin Taylor, where he worked alongside the restaurant’s namesake.
